NICK General Manager

At the helm and responsible for a tight and well-humoured ship, Nick has sharpened his skills and wit with stints at numerous gastro pubs in London and locally. A self-confessed people person, he has a passion for making even the smallest of interactions memorable. Nick has made friends with numerous local brewers, winemakers and craft spirit producers to assemble a cellar that showcases the best of Kent & Sussex, plus a few hand-picked imports from Surrey, Sicily & Sonoma.


Inspired by her travels far and wide, from Scotland to Sydney, and a little closer to home, her vegetable garden, Caroline assembles flavours that naturally flow with the seasons. Her aim is always to deliver comforting dishes that are refined and bring a smile to your face. Using the best produce from our excellent local suppliers, the menu is designed to pair well with your drink of choice, whether it’s a relaxed pint or celebratory glass of fizz.

SHAUN Sous Chef

With a passion for executing even the simplest elements perfectly, Shaun has honed his skills and developed his cooking philosophy while working at numerous local gastro spots over the last 10 years. He brings a modern outlook and a pinch of humour to the table, working in perfect harmony with Caroline to constantly refine the menu, all the while, ironically, singing out of tune. Well, we all have our weaknesses.
